Regenerated Farm by Studio Strijkers and Studio MVRDVWhen Peter Lute, the young Dutch chef, first visited the buildings of the old gunpowder factory located at Ouderkerk aan de Amstel, dating back to the 1700s, he found a farm; the large internal spaces contained granaries, a stall, a hayloft.
Lute's idea of transforming these fascinating, neglected spaces to create a restaurant - back in 2000 - met with efficient materialization thanks to the design by Eline Strijkers, the Dutch architect of the studio of the same name in Rotterdam, in collaboration with the studio MVRDV, where Strijkers had worked for several years.
Peter Lute wanted to use the largest building for the dining room, but it would require additional areas: service spaces (kitchen, rest rooms, rooms for the staff) and spaces for the bar and the aperitifs.
The possibility of adding some new constructions to the presence of the main building (protected as historical heritage) led Strijkers toward a satellite concept for the layout of the functions: around a vast central area adjacent spaces were created, as in the farms of the past, for complementary purposes.
This was the idea behind the greenhouse, a steel and glass structure connected to the restaurant, built under the roof of the old hayloft, and now used for aperitifs and as a private dining room.
